The hardest part of this recipe is assembling the ingredients (and finding the can opener), but after that it’s a breeze. People rave about this meal.

Cook Time: 25 Minutes

 

Ingredients:

  • 1 small red onion, chopped
  • 14.5 oz can fire roasted tomatoes
  • 2 cups water or vegetable broth
  • 2 Tbsp chopped garlic
  • 1 cup frozen corn kernels
  • 2 15-oz can black beans (1 of the 2 with added jalapeño), drained and rinsed
  • 2 sweet potatoes, chopped
  • 1 1/2 cup quinoa
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • 1 Tbsp taco seasoning
  • black pepper
  • 3 Tbsp chopped cilantro
  • Juice of 1 lime

 

Instructions:

  • Saute the onions
  • Add all but the last three ingredients to the Instant pot.
  • Set on high pressure for 5 minutes.
  • Natural pressure release for 10 minutes.
  • Release the pressure, open the lid, and add the remaining ingredients.
